You can actually use the recording (and screenshot etc.) functions of X-fire offline.

I just start X-fire (when disconnected from the internet) and when it tries to log-in etc, I just skip it.

Then I launch a game as normal (not through X-fire) and I get the little message pop-up in the corner that says 'X-fire in game enabled: Offline' or some such.

Then I press the key combination I have set up to record video (or take screenshots)

That doesn't work for me, when i press skip it went back to the login details, and yes the internet was disconnected.
